Happy What We’re Eating Wednesday!!

Omelettes make a beautiful, filling, nutritious, easy meal and are extremely underrated! It is so easy to whip one up with whatever you have in your fridge!

Today, Lynn made a fully stacked omelette with red peppers, onions, mushrooms, and a side of fresh salsa and guacamole! Yum!
