Making Homemade Liver Patê

Ingredients:
- 1 package of grassfed bison or beef liver
- 1/2 cup raw apple cider vinegar
- 3 to 5 strips of pastured pork bacon
- 1/2 cup grassfed butter
- 1/2 large or 1 small organic onion
- 1/2 teaspoon pink salt
- 1 to 2 teaspoons fresh rosemary, optional
How to Make It:
- Prep the liver. Place thawed liver in a bowl with apple cider vinegar for 10 minutes, flipping halfway. This tenderizes the liver and helps mellow the flavor.
- Cook the bacon. Fry until crispy and save the bacon fat. Chop half of it for the patê, and save the rest for topping later.
- Sauté the onions. Dice and sauté onions in the bacon fat for 1 to 2 minutes. Add rosemary if you like. This brings sweetness and extra flavor.
- Cook the liver. Rinse the liver with water, then add the liver and butter to the pan. Cover and cook for 2 minutes per side over medium heat. Don’t overcook—the liver should stay tender.
- Blend it. Combine the liver, onions, rosemary, melted butter, salt, and half of the bacon in a blender. Blend until smooth and creamy.
- Assemble. Scoop the mixture into a container, flatten it, and sprinkle the remaining bacon bits on top.
- Chill and serve. Refrigerate until firm. Enjoy on crackers, veggie sticks, or even by the spoonful.
